Masterclass 01 – Exploring Yamanashi Prefecture
Feats. Shichiken & Dan at Ami
Kickstarting the series, the first masterclass will be held at Ami, and features two breweries from Yamanashi Prefecture – Shichiken and Sasaichi Brewery.
- Shichiken, founded in 1750 by Ibei Nakaya, follows traditional methods and uses local ingredients to produce a variety of sparkling and still sake, including labels made with the Methode Champenoise technique.
- Established in 1919, Sasaichi Brewery launched the sake brand Dan in 2013. The brewery uses premium quality sake-making koji rice and soft water from Mount Fuji, the traditional Yamahai Brewing Method overseen by Mr. Masakazu Ito, a renowned Noto Toji, to create a fresh yet delicate umami flavour.
This masterclass highlights the special characteristics of the Yamanashi Prefecture, which is blessed with rich water and sake rice resources, thus leading to an unrivalled variety of different sake types over the years. Producing two celebrated sake brands within the region, Shichiken and Dan perfectly represent the uniqueness of the Yanamashi Prefecture. In this session, participants can compare and contrast sake creations from an 18th and a 20th century brewery, which feature traditional methods with modern aspects.
Pairing these premium sakes with Ami’s “Steamed duck foie gras” perfectly achieves the balance between the moistness of foie gras and sake’s light and dry flavour. Other highlights from the pairing canapés include scallop, tuna tartlet, caramelised chicken bite, fried shrimp and cheese puff.

Masterclass 02 – Savouring Seasonality with Limited Edition Sake
Feat. Eiko Fuji at SOMM
The following masterclass will be presented at SOMM by Eiko Fuji from Yamagata Prefecture’s Fuji Brewery, and will have a focus on seasonality.
- Established in 1778 in the Yamagata Prefecture, which is synonymous with ginjo sake, Fuji Brewery follows three sake brewing principles: Clear Taste, Not Getting Tired, and Enjoying with Meals. Now led by the 13th generation of the Kato family, the brewery names their sake after Mt. Fuji to represent its grandeur.
This masterclass will see a line-up of five celebrated sakes from Eiko Fuji, two of which are limited editions. Eiko Fuji Junmai Daiginjo 79 Au Pure Gold, with only 12 bottles available in Hong Kong, contains six times more gold leaves than usual, and is made with 50% Hatannishiki, a local sake rice used to produce premium sakes. There is also the rare Eiko Fuji Soma One Jumai Daiginjo with the extreme 1% rice polish ratio, of which only 150 bottles are available worldwide.
To pair with Eiko Fuji Junmai Daiginjo 79 Au Pure Gold, SOMM has prepared Beer Batter Fried Ebisu Premium Oyster with Ravigote Sauce to enhance the bottle’s fruity aroma and smooth texture. Guests can also enjoy Snow Crab, Egg White Mayo & Zucchini Roll that pairs with Eiko Fuji Sakemirai Junmai Daiginjo, and “Brand All Natural” Beef Short Rib ‘Charsiu’ for Eiko Fuji Hakuyou Junmai Ginjo.

Masterclass 03 & 04 – Sake Ensemble, an exquisite fusion
Feat. Hakuko, Shichiken, Senkin, and Takizawa at The Aubrey
Scheduled to take place at Mandarin Oriental Hong Kong’s award-winning contemporary izakaya The Aubrey, Sake Symphony: A Refined Tasting Journey will highlight four breweries, including Morikawa Brewery, Shichiken, Senkin, and Shinshu Meijo.
- Morikawa Brewery in Hiroshima Prefecture produces the Hakuko brand and uses the “soft water brewing method” to make sake. It benefits from the region’s clean waters and clear air, and the sake is well-known for leveraging Hiroshima’s elevated water quality.
- Domaine Senkin, a brewery with rich heritage, established in 1806 in Tochigi Prefecture, is currently led by two brothers who are revitalising traditional sake production with a more contemporary approach.
- Shinshu Meijo from Ueda in the Nagano Prefecture has 150 years of sake brewing history. Its “Takizawa” sake series uses “Miyamanishiki” rice and “Obsidian” water that is known for its purity.
A total of six bottles from the four breweries will be available for tasting at the masterclass, including Hakuko Junmai Daiginjo 50 SARASOJU, Shichiken Kinunoaji Junmai Daiginjo, and Classic Senkin Muku. This is the perfect masterclass for those who wish to understand all aspects of sake and for savouring sake from a variety of different breweries and perfectly satisfy taste buds with a series of canapés present by Aubrey.

Masterclass 05 – Unveil rare gems on Sado Island
Feat. Manotsuru at Kaen Teppanyaki
To be held at Kaen Teppanyaki, the fifth masterclass will spotlight Obata Brewery’s signature Manotsuru.
- Obata Brewery, located on Sado Island in Niigata, produces sake using high-quality groundwater and rice, including the well-known sake brand Manotsuru. Established in 1885, the brewery has been following the same traditional hand-made methods for over a century, which take full advantage of the abundant nature of Sado Island.
Guests participating in this masterclass will be able to savour four sakes from the brand, the highlights being the award-winning Manotsuru MAHO Daiginjo and Manotsuru Junmai Daiginjo MIKU. Besides the perfect environment for sake tasting with the Japanese counter seating, Kaen Teppanyaki is also pairing the canapés in Teppanyaki style to enrich the tasting experience.
Reservations are available at: https://sevn.ly/xhlGIqn2
As well as this intriguing line-up of masterclasses, Ami, Somm and The Aubrey will also be presenting a special sake pairing menu throughout the month of April and May, featuring rare labels from selected breweries. Stay tuned!
