LANDMARK Sake Walk: Unleashing a Second Wave of Sake Craze with Exquisite Pairing Menus

The premier sake event features curated sake pairing menus at three premium dining establishments Ami, SOMM and The Aubrey in LANDMARK from April to May.

Hong Kong, 10 April 2024 – Hong Kong’s premier celebration of Japan’s national beverage, Sake Walk, returns from a five-year hiatus to the LANDMARK in April. LANDMARK Sake Walk not only features visiting representatives of premium Japanese breweries showcasing tasting events and masterclasses to sake beginners, lovers, and enthusiasts alike, but is also set to create a second wave of sensation with three gastronomic menus at premium dining outlets Ami, SOMM, and The Aubrey in collaboration between Jebsen Wines & Spirits and LANDMARK.

The three restaurants will feature premium sakes from designated sake breweries between April and May, and curate a bespoke menu paired with the sakes. The gastronomic journeys profile exceptional labels by renowned sake breweries including very rare premium sakes – complemented by delightful tasting notes for guidance.

Sake Pairing Menu 01 –Reveling in the Refined Essence of Yamanashis Sake Delicacies

Feat. Shichiken & Dan at Ami

Modern French restaurant Ami at LANDMARK ALEXANDRA spotlights two renowned Japanese breweries from Yamanashi Prefecture—Shichiken and Sasaichi Brewery.

-          Shichiken, founded in 1750 by multi-generational sake brewer Ibei Nakaya, is renowned for traditional practices and local ingredients including Hakushu water; and Sasaichi Brewery, producer of beloved sake brand DAN, dating from 1919 and distinguished by traditional Yamahai brewing with koji rice and soft water from Mount Fuji.

Ami’s special sake pairing menu will feature a series of seafood courses. The first course of scallop is designed to be enjoyed with Shichiken Yama-no-Kasumi Sparkling, whose sweetness and umami rice flavour follows with a powerful fruity taste, leading to an explosion of flavours in the mouth together with the sourness of sherry vinegar and the saltiness of Oscietra caviar.

Cod is served next with seaweed and beurre blanc, which pairs with Dan Yamahai Junmai Ginjo Bizen Omachi, a silky refreshing muscat style rice wine with a unique acidity. The following plate is the lobster, served with a homemade pasta of Thai basil in crustacean sauce, along with Shichiken Kaikoma Junmai Daiginjo. The bottle features a great ginjo fragrance and expressive unami from the rice. Another signature course is yellow chicken with morel in a yellow wine sauce, which is a perfect match with Dan Junmai Daiginjo, whose aromatic, fruity flavours enhances the umami of chicken.

Sake Pairing Menu 02 –When French Style Meets Glorious Mount Fuji

Feat. Eiko Fuji at SOMM

 

French bistro SOMM at The Landmark Mandarin Oriental showcases Eiko Fuji from Yamagata Prefecture’s Fuji Brewery with a focus on seasonality.

-          Named after Japan’s national symbol, Eiko Fuji, translating to “Glorious Mount Fuji,” demonstrates its grandiose aspiration in traditional hand-made sake. Founded in 1778, the family-run brewery in Yamagata prefecture is known for light, clean and delightfully fruity ginjo sake. Capturing the essence of the region, it produces its koji rice by hand and uses only the best, cultivated in the northern region of Mt. Rokko.

With its trademark use of Japanese ingredients cooked in French style, SOMM presents a 4-course and a 6-course degustation menu paired with Eiko Fuji. In the 6-course menu, the appetiser of Aka Uni “French Toast” pairs with Eiko Fuji Sumiretsuyu Ibuki Junmai Daiginjo which has a medium bodied texture and lively acidity; and beef tenderloin tartare with avocado, Aji Amarillo & quinoa is paired with Eiko Fuji Hakuryo Junmai Ginjo, which features a subtle bubbly sensation with a dry finish.

Next, the seared scallop with organic choi sum, ginger, shiro soy & Kabosu beurre blanc. Then go for the toothfish confit with haricots verts in champagne beurre blanc with muscat grapes – or Boston Lobster with white asparagus, morels, shallot & watercress sautéed snap peas in dry sherry beurre blanc (for an extra HK$188), paired with Eiko Fuji Survival Junmai Daiginjo, whose highly fruity aromas are reminiscent of tropical fruits like pineapple.

Yellow Chicken with green asparagus, Grenaille ratte potato, tarragon sabayon and pickled onion & chicken jus pairs with the smooth bodied Eiko Fuji Sakemirai Jumai Daiginjo – or for an extra HK$208, Roasted Lamb Leg with ratatouille, piment d’espelette, roasted garlic and basil & lamb jus pairs with Eiko Fuji Alchemist Junmai Daiginjo, which boasts a graceful and smooth taste with a radiant finish.

Sake Pairing Menu 03 –Preserving Heritage, Embracing Innovation

Feat. Shichiken at The Aubrey

 

Eclectic Japanese izakaya The Aubrey atop the Mandarin Oriental will present a pairing menu that exclusively features Shichiken’s sake range.

Start with the signature oyster served with Hokkaido uni and salmon roe along with the fruity and bubbly Shichiken Yama-no-Kasumi Sparkling. Hamachi tataki sushi roll with plum sake, cucumber, apple oroshi and sesame, along with chef’s selection of nigiri platter of six pieces is paired with Shichiken Hoshi-no-Kagayaki Sparkling, a dry sake with a hint of sweetness followed by a short, crisp finish. Chicken Katsu Sando sandwich, regally presented with The Aubrey caviar and gold leaf, marries delicate, aromatic Shichiken Onakaya Junmai Daiginjo.

Iberico Secreto Pork, sustainable miso Black Cod, wagyu oxtail and bone marrow fried rice is paired with fruity Shichiken Biroadoaji Junmai Ginjo and has a refreshing sourness. For the sweet tooth, the black sesame cheesecake with yuzu granita completes the pairing fiesta with refreshing, bubbly Shichiken Sora-no-Irodori Sparkling, featuring a diversity of flavours including pear, toasty, fig, fresh almond, white flowers, and a hint of melon.

This special pairing menu requires a minimum of two guests and full table participation.
