LANDMARK Launches ‘Tasting Mastery’ Series: A Unique Culinary Adventure

Award-winning chefs and renowned local food critics collaborate to create one-of-a kind dining experiences at LANDMARK

(Hong Kong, 12 June, 2023) – Home to 14+1 Michelin Stars, 8 Black Pearl Diamonds, and 36 Forbes Travel Guide Stars, LANDMARK announced today the launch of a new collaboration series LANDMARK Tasting Mastery that brings together award-winning chefs and renowned food critics, columnists, and editors in the culinary scene to curate a unique experience, including an exclusive co-created menu.

From now until 31st July, the series kicks off with a special six-hand menu co-created by celebrated food critic Susan Jung alongside Michelin Star executive chef Nicolas Boutin and chef de cuisine Léa Cantalloube of modern French restaurant Ami.

As part of the collaboration, the trio presents six meticulously crafted courses at Ami available for both lunch and dinner, priced at HK$1,388 per person (three days advance reservation required). The journey begins with the refreshing taste of the Snow Crab and Heirloom Tomatoes paired with Grüner Veltliner Kamptal Fred Loimer 2021. Followed by Chef Boutin’s famed signature dish Cévennes Onion, which is disassembled and stuffed with black truffle between every slice, then reassembled and paired with a crispy buckwheat tuille and truffle-veal jus. The recipe evolved over several years “like a music composer or author” as he strived for a minimalist simplicity in the use of traditional French ingredients – enhanced by black melanosporum truffle.

The main course introduces Poached Seabream with a Smoked Beurre Blanc and Morel, complemented with Palette Château Simone Blanc 2020, to create a delightful and harmonious taste experience. The pièce de résistance of the menu is the Yellow Chicken, an Ami staple, and tunnelboned chicken stuffed with glutinous rice which originated from Susan’s ‘nor mai gai’ chicken recipe in her cookbook. The chicken is stuffed with glutinous rice with dried shrimps, dried scallops, sauteed shiitake mushroom, and soy sauce, and served with Boutin’s caramel jus to give a touch of French to the oriental dish.

A creative combination of Goat Cheese, Wasabi, Nuts & Honey balances the strong flavour of goat cheese with the spiciness of wasabi and the sweetness of nuts and honey to continue the gastronomic journey. The dessert is a collaboration between Jung and Cantalloube featuring lychee puree, Kaffir lime zest, and fresh lychee brunoise, and a whipped ganache infused with Kaffir lime leaf and white chocolate. Pairing with lychee sorbet and yoghurt crisp on the side, and complemented with fresh lychee, Susan Jung explained, “it’s one of my favourite fruits with a unique texture and it’s in season now.”
